Five nutritious, easy-to-make, vegetarian breakfast dishes for kids with bread

Try out these yummy and filling under-10-minute breakfast dishes to keep your kids healthy and happy. Use whole-wheat bread if you are concerned about using refined flour bread. At the end of the post, there's a bonus tip to get more recipes if you are not a fan of bread:

1. Avocado with toast:

Spread mashed avocado with some rock salt and lemon juice (Vitamin C) for seasoning on the toast and you're done. You can also make a guacamole spread by adding in chopped onions and tomatoes. This is equally healthy for kids and adults.

2. Paneer sandwich: 

Saute scrambled paneer in butter with some onions, tomatoes, bell peppers (optional), seasoned with some salt and ketchup or whatever sauces you like and make a nutritious, wholesome sandwich. Swap the paneer for tofu to make a fat-conscious adult-version.

 3. Cheesy mushroom toast:

Saute mushrooms in butter and garlic (if you like the flavor). Spread them with cheese and Italian herbs like oregano on toasted bread. This is packed with protein from mushrooms and cheese. For adult-friendly low-fat version, switch the cheese for pesto.

4. Bread omlette

There are many variations of the classic bread and eggs combination, and they never disappoint! If you're in a hurry, simply top the bread with a fried egg and cheese (optional) or dunk the bread in the egg and cook it the French Toast way. For fancier versions, put in chopped veggies like spinach, mushroom, peppers for extra nutrition into the omlette to top the bread, or use scrambled eggs (apna desi anda bhurji) as a sandwich filling.

5. Mixed vegetable sandwich

As a  Mumbaikaar, I am a huge fan of the classic Mumbai street-style sandwich which is loaded with veggies like sliced carrot, beetroot, cucumber, tomato, onion, capsicum and potato. Use any vegetables you have and grab whatever seasoning is handy like chat masala, rock salt, green chutney, tandoori mayonnaise, cheese spread etc. You can try hummus spread for extra protein base instead of mayo-cheese spreads to cut down on fat.

Bonus recipes:

Any of these dishes can be converted into rolls or frankies with similar fillings, like an egg roll, or a paneer frankie. You can even use them as fillings in tacos if you want to change things up.

A long wishlist: Reflecting seven years later

Seven years ago, I blogged about a long wish list ( link ) penning down many of my desires at the time. Lot has passed in my life and in world since (one word - COVID!) - I'm on the other side of 30 now and a mother of twin girls!
